SALSA MAKING DAY

After a morning of Avon deliveries,I picked up lunch for g-son and #1 son at Mcdonalds on my way home and met them here. Son found out his nurse wasn't coming today so he and I changed his bandages and he went over to a friends apple house for the afternoon.
G-son settled in for the afternoon playing and riding his tricycle and I settled in for an afternoon of salsa making.
Hubbie had picked all the tomatoes Saturday and we spread them out to ripen and in this heat that didn't take long.
I scalded about 32 or 34 medium-large tomatoes, peeled and cut them into about 1/2" chunks.
I chopped 3 large bell peppers in the food processer.
Then chopped 3 medium sized onions in the food processor.
I like using this packaged spice ,you get an added bonus of some dehydrated veggies to help thicken the salsa. I go by the cooking times on the package but everything else is pretty much added to taste.
Also per the package I add 1 cup of vinegar, I like cider vinegar.
Mix all this up in a large pot and bring it to a rolling boil.
Turn the heat to simmer and let the salsa simmer for about 10 minutes. I let mine simmer a few minutes longer because I was doubling the recipe.
Put the Salsa in jars,I use pints, and waterbath it for 40 minutes.
End results 14 pints of delicious homemade salsa for the cold winter ahead and 1/2 jar which hubbie devoured as soon as he got home from work. I must admit this is some of the best salsa I've made.

Son came back from his visit and played with g-son for a while. Things are starting to take on a normal setting if you don't look at his leg or see the crutches laying on the floor.
After everyone left I took a long walk and noticed the Jewel weed is starting to bloom, I promised a friend at market I would bring her some when it bloomed. I can't tell what it is until the little orange blooms come out. She makes soap and wants some to make a soap to use after you have touched poison ivy. If you get into poison ivy you can rub jewel weed leaves on the spot that touch the ivy and it will stop the poison.
I will gather her some Wednesday evening so it will be fresh Thursday.
I baked some pound and wine cakes tonight.
The weather today has had a little bit of everything, mostly cloudy with a few peaks of sunshine from time to time and a very few drops of rain this evening. The temperature has been in the low 80's but the humidity ruins the cool temps.
Thanking God for the progress #1 son is making with his leg and praying for His healing hand to continue touching him.

Hi Marilyn, That salsa looks so good.... YUM!!!!

I've never seen Jewel Weed --but we probably have it... That's neat to know that it helps when you have poison ivy..

Glad No. 1 son is doing better... I'll keep my fingers crossed.
